The meal is ideal for a fun and different breakfast.
Ingredients:
2 large portobello mushrooms without stems
2 eggs
¼ cup of crumbled feta or goat cheese
1 cup of fresh spinach torn
1 onion chopped
½ tsp. of olive oil
1/8 tsp. of pepper
1/8 tsp. of garlic salt
cooking spray
Minced basil for garnish
Heat the oven to 425 degrees Fahrenheit. Spray each mushroom with cooking spray and put them on a baking sheet with the stem side up. Sprinkle each with the garlic salt and pepper. Bake the mushrooms uncovered for approximately 10 minutes. In a pan, saute the onion until translucent and tender. Add the spinach and stir. In a bowl, whisk the eggs and salt. Add the eggs to the pan and cook until the eggs are done. Spoon the egg mixture into the mushrooms. Sprinkle each with the cheese and garnish.
