Baked Chicken Fajitas – Heart Healthy

Great especially in some whole wheat tortillas. Nice since we are trying to eat better. :excited

Ingredients serves 8

Meat

1 lb boneless skinless chicken breast cut into strips

Vegetables

1 onion sliced
1/2 red bell pepper strips
1/2 green bell pepper strips
1 can (15oz) diced tomatoes no sodium added

Spices

2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp dried oregano
2 tbsp extra virgin olive oil
1 1/2 tsp mrs dash south west chipotle

Directions

  1. Preheat oven to 400°F
  2. Place chicken strips in a greased 13 by 9 baking dish
  3. In a small bowl combine the oil, chili powder, sw chipotle, garlic powder and the dried oregano
  4. Drizzle the spice mixture over the chicken and stir to coat
  5. Next drain and add the tomatoes, peppers and onions to the dish and stir to combine
  6. Bake uncovered for 20 to 25 minutes or until chicken is cooked through and the vegetables are tender
