Ingredients:
6 zucchini
1 pound of turkey sausage
2 tomatoes chopped
1 cup of Panko breadcrumbs
1/3 cup of Parmesan cheese
1/3 cup of minced parsley
2 tbls. of minced fresh or 2 tsp. of dried oregano
2 tbls. of minced fresh or 2 tsp. of dried basil
¼ tsp. of pepper
¾ cup of shredded skim mozzarella cheese
parsley for garnish
Cut the zucchini in half lengthwise. Remove the pulp but leave ¼-inch. Chop the pulp. Put the zucchini halves into a baking dish and microwave for 3 minutes until crisp but tender. In a pan, cook the sausage and zucchini pulp for eight minutes until the sausage is not pink. Break the sausage into small bits. Drain when done. Stir in the breadcrumbs, herbs, Parmesan cheese, tomatoes and pepper. Spoon the mixture into the zucchini shells. Put the filled shells into two 13×9-inch baking dishes. Cover and bake for 20 minutes at 350 degrees Fahrenheit. Sprinkle each with the mozzarella cheese and bake uncovered for up to eight minutes. Garnish with parsley.
