This excellent heart healthy recipe for Chicken Pasta is a favorite for many Dash Diet adherents who are watching their Blood Pressure or Cholesterol.
Ingredients:
6 oz. of uncooked whole grain spaghetti
2 tsp. of canola oil
1-10 oz. package of sugar snap peas trimmed and cut
2 cups of carrots julienned
2 cups of cooked and shredded chicken
1 cup of Thai peanut sauce
1 medium cucumber seeded and sliced
Freshly chopped cilantro-optional
Cook the spaghetti according to the directions and drain. In a pan, heat the oil over medium heat. Add the peas and carrots and stir-fry for eight minutes. Add the chicken, peanut sauce and spaghetti. Toss to blend and heat through. Top with additional cucumber slices and cilantro if desired.
Each 1 1/3 cup serving provides:
15 grams of fat
42 grams of cholesterol
432 grams of sodium
15 grams of sugar
6 grams of fiber
25 grams of protein
